In Austria the Christmas season begins with the start of Advent and this is when most households will be filled with the scents and aromas associated with Christmas – such as cinnamon, nutmeg, ginger, honey, nuts and fruits – as baking Christmas cakes and biscuits gets underway. Christmas itself begins on Christmas Eve, or Heilige Abend, when the streets are deserted and families gather for their special Christmas meal which in the past consisted of mainly fish, such as a Carp, but today will often feature a roast goose with all the tasty, aromatic trimmings that make it so special. Below are a few of the recipes which have been sent in to us and if you would like to add any of your own please send them into us and we will include them.
Mix all the ingredients together and quickly knead to a smooth dough. Do not let the dough become warm or it can cause the fat to separate
Rub the sieved flour and cubed butter together until they resemble breadcrumbs. Add the sifted icing sugar and stir through. Add the Egg Yolks, the ground almonds, Lemon Zest
Mix the egg whites with the sugar, the coconut and the lemon zest and place the mixing bowl over a pan of hot water.
Dice the bread rolls and fry them in the butter together with the finely chopped onion and parsley until golden brown.
Clean and descale the carp. Cut it in half, wash it, dry it with a cloth and then cut it in portions of about 150g. Put lemon juice and salt on the fish.

Clean the goose and rub with the marjoram, salt and pepper on the outside and just salt and pepper inside. Peel and core the apples and cut them into large chunks.

Cook the finely sliced onion in a heavy based large pan. Add the sugar when the onion is golden and stir. Add the cabbage and the red wine vinegar
